- The Food, Culture, and the Environment, taught by renowned Cal instructor Kristen Rasmussen de Vasquez, MS, RDN, explores the power of food systems and provides perspective and knowledge into how the food we eat impacts our environment and culture.
- Politics to the Extreme: Radicals, Revolutionaries, and Terrorists is taught by Professor Darren Zook. Using contemporary case studies and focusing on politics while also drawing on insights from fields such as psychology, biology, and sociology, this course will investigate the sources and causes of political extremism and radicalism, as well as potential solutions.
